Yes you will have to try things but I wouldn't worry to much about the sore and the bit if it wasn't a bit that caused.
Remember this is a pony and thicker mouth pieces do not equal milder. A pony has less room in their mouth then a large horse does so thicker can mean harsher to them.
The not wanting to take the bit or let it go is more then likely from someone either hitting the teeth with a bit or catching the chin with the curb strap. Could be from harsh bit or harsh hands too but normally it's from getting teeth hit.
What is a good bit is going to depend on so many things.
